Wattle Seed Cookie Recipe

I recently spent a few days at Uluru in the Northern Territory learning all about our Australian indigenous culture and bush tucker :)

During one of the talks given by an indigenous elder, he shared a wattle seed recipe that was absolutely delicious. Wattle seeds are a food source that has been traditionally eaten by many Indigenous Australians, particularly in arid and desert region and have an array of health benefits including calcium, zinc, magnesium, iron and potassium. They are a Low GIycemic Carbohydrate, a source of protein and fibre too.

As part of a healthy balanced diet you can incorporate the Wattle seed into your everyday cooking such as this cookie recipe.

Ingredients:

200g butter

90g icing sugar

1 egg yolk

250g plain flour

2g baking powder

5g wattle seed 

Directions:

  1. Pre-heat oven to 190 degrees celsius.

  2. Mix all ingredients together in a large bowl.

  3. Divide mixture into small pieces and place on trays lined with baking paper.

  4. Bake for 10-15 minutes. Set aside to cool and enjoy.

The elder recommended the Tuckeroo brand of wattle seeds.
