Bitter Gourd Anama

Ingredients

500g Bitter Gourd

50g Onion

10g Garlic

1 Spring Curry Leaves

1Nos Green Chilli

20g Curry Powder

10g Turmeric Powder

10ml Coconut Milk (1stextract is ½ cup, 2ndextract is 1 cup)

1 inch Cinnamon Stick 

5g Pepper Powder

10g Tamarind

Salt to taste

 Method

1.    Clean and wash bitter gourd, cut into strips.

2.    Add all ingredients together, except 1stextract of coconut milk.

3.    Simmer and stir until cooked on medium heat.

4.    Add 1stextract of coconut milk and check consistency and taste. 

Snake Gourd Curry

Ingredients  

500g Snake Gourd

50g Onion

10g Garlic

1 Spring Curry Leaves

1Nos Green Chilli

20g Curry Powder

10g Turmeric Powder

10ml Coconut Milk (1stextract is ½ cup, 2ndextract is 1 cup)

Salt to taste

Method

1.    Clean and wash snake gourd, cut into strips.

2.    Add all ingredients together, except 1stextract of coconut milk.

3.    Simmer and stir until cooked on medium heat.

4.    Add 1stextract of coconut milk and check consistency and taste. 

Kurakkan Kiriya

Ingredients

90g Kurakkhan Flour 

150g Jaggery

1Ltr Coconut Milk

1tsp spice (I recommend cardamom and cinnamon)

20g Cashew nuts

20g Sultanas

Salt to taste 

Method

1.    Add coconut milk to Kurakkan flour and heat for a few minutes

2.    Add all other ingredients, simmer and stir on medium heat. 

3.    Check consistency and tastes.
