Red Radish Soup
2 Tbs. rapeseed oil
2 potatoes (peel and cut into dice)
1/2 radish, white or black (peel and cut into dice)
1 leek (remove tough leaves. Cut into dice or pieces)
1 bunch of red radishes (Remove leaves and stems. Cut into dice or pieces)
1/2 tsp. Cumin
1/2 tsp. Aniseed
750ml vegetable stock
125ml coconut milk
125 ml red beet juice
Salt and pepper
Prepare the ingredients as described above.
Heat the oil in a saucepan. Saute’ aniseed, coriander and cumin, and the add the potatoes, all radishes, leek and braise. Add some salt and pepper. Add coconut milk and vegetable stock, and simmer for at least 20 minutes. Mix well and add more vegetable stock to thin to the desired consistency. Then add the red beet juice, but do not bring to a boil afterwards.
