Glazed Pineapple on Fig Compote

Glazed Pineapple;

1/2 pineapple

250ml apple juice

2 cloves

1/2 tsp. curcuma

Peel the pineapple and cut into wedges. Put the remaining ingredients into a frying pan and bring to boil. While occasionally turning the pineapple wedges, reduce the fluid until you get the consistency of honey. Take the frying pan from the stove, and cool.

Fig Compote:

4 figs

200ml grape juice

2 Tbs. black currant marmalad

1 star anise

2 slices fresh ginger

1 splash rose water

Boil and reduce the juice, marmalade and spices until you achieve a creamy consistency. In the meantime, divide the figs into eight pieces and lay the figs into the liquid. Simmer about one minute. Add rose water to taste.
